Tangy Tomato Basil Soup

Welcome to my first ever recipe post!  I’ve thought about sharing a few of our favorites for some time now – and have finally decided to do it, starting with this soup recipe. It’s tangy, thick, and slightly cheesy – and ready in under 20 minutes!

On a cold day last week, I decided I wanted some tomato basil soup.  I’m not much of a soup person, but I love a bread bowl full of it from Atlanta Bread Company on a cold day – or even a warm day if it’s a lousy one.  I used to get it every couple of weeks when I was working full time and needed cheering up.  But that is no longer a problem, so I don’t have it as often.  On that particular cold day last week, I didn’t feel much like driving across town to get a warm bowl of soup, so I decided to make my own.  I threw together a few ingredients, and when it turned out great, I scribbled them down so I could make it again.  It’s not quite the same as ABC’s, but it’s simple to make and tastes great with a piece of cheese toast.

I’m not one for spicy food, but the pepper and paprika add just the right amount of heat to overcome the sweetness of the tomato soup.

It’s relatively warm in South Carolina today, but cooler temperatures are on their way.  If you’re in a place where it’s cold and gray, a bowl of warm soup will brighten your day! (Oh, look.  I’m a poet.)
